1 egg (for baking) = 2 egg yolks or an egg-sized dollop of mayonnaise.

1 cup cake flour = 2 tablespoons cornstarch the fill with all-purpose flour (AP) to one cup.

1 tsp dry mustard = 1 T prepared mustard

1 cup butter = 1 cup coconut oil, lard or shortening and ½ tsp salt.

1 c. corn syrup = ¼ c water and 1 c. sugar

1 c. buttermilk = 1 T. apple cider vinegar then add milk to equal one cup.  Let sit for 15 minutes.

1 c. nuts = 1 c. Grapenuts cereal and ¼ tsp almond flavoring.

1 c. light cream = 1 cup undiluted evaporated milk.

1 (15 oz.) can of tomato sauce = 1 6 oz can of tomato paste and ¾ c. water.

1 T. cornstarch (for thickening) = 1 T. AP flour.

1 tsp. baking powder = 1/2 tsp cream of tartar and ¼ tsp baking soda.

1 ounce unsweetened chocolate = 3 T. cocoa powder and 1 T. butter

1 c. molasses = 1 c. honey, the taste is milder.

1 c. honey = 1 ½ c. sugar and ¼ c. water.

1 c. sour cream (for baking) = 7/8 c buttermilk and 3 T. butter.

1 c. heavy cream (for baking) = 1/3 c. melted butter and ¾ c. milk

1 c. catsup or chili sauce = 1 c. tomato sauce, ¼ c. sugar and 2 T. vinegar.

1 c. tomato paste = 1 c. tomato sauce plus 2 T. AP flour.
