I hate paying $2 for a can of cream of chicken soup. I hate the carbs in the canned kind even more. This recipe came about when I added a little too much water to my mashed “fauxtatoes.” Cauliflower is a common potato substitute in the THM and low-carb world. I would never have believed it if I hadn’t tried it myself.  The creamy and thick texture is perfect, but the real secret lies in processing the cauliflower until it is smooth. When you think it is perfect, do it a little longer. Trust me on this. This just made my life easier, and the kids get more veggies. It’s a win win opportunity.

  • 24 ounces of frozen cauliflower florets
  • 4 cups of water
  • 2 heaping tablespoons of Better than Bullion Chicken flavored1
  • 1 onion roughly chopped
  • 1 teaspoon of Sea or Kosher salt
  • 1/8th-¼ teaspoon cracked black pepper

Simmer until very soft, drain, and reserve liquid.

Place ½ cup butter, 4 ounces of cream cheese, 2 teaspoons of onion powder, 1 teaspoon of garlic powder, and drained cauliflower into a food processor and blend until completely smooth- this may take up to 5 minutes. It will take on a velvety appearance.

Taste and adjust salt, pepper, and other seasonings. If your kids don’t like celery, cook it with the above and blend it in- They will never know. 😉 Otherwise, simmer 1 cup of roughly diced celery in the reserved liquid until soft- adding water if needed.

When soft, add ½ a small can of Rotel tomatoes. I only added ½ a can to cut back on the carbs. Drain off liquid and reserve.

On low heat, add cauliflower cream to celery, 1/8th – ¼ teaspoon of ground thyme, 1/3 cup heavy cream, and slowly stir in one cup of the reserved liquid. I ended up with 2 cups of reserved liquid left- I froze it in ice cube trays for another day.

Add leftover roasted chicken sliced, with skin and bones removed or a can of chunked chicken. Warm through and serve.

The best thing about this recipe is the versatility! Need cream of mushroom? Just add a pound of diced and sauteed mushrooms. Want to leave out the celery? Go ahead. Want potato soup? Add chunks of ham instead of chicken, green onions, and BACON!! Need a vegetarian option? Sub out the chicken broth for Better than Bullion Roasted Vegetables- Sooo Yummy!! I am planning to use the leftovers for a seafood lasagna. I promise, once you try this, you will never go back!
