One of Baby Girl’s college friends can’t have gluten, and one thing I have noticed about that bunch is that brunch is common place. I have been looking for and experimenting with gluten free recipes for classic southern faire- this comes pretty close. It reminds me of a whole wheat flap jack.   • ½ cup low fat cottage cheese
  • 2 eggs
  • 1 tsp vanilla

Place in blender and liquefy! Pour out into a medium bowl and add:

  • 3 heaping tablespoons of ground golden flax seed
  • ¼ tsp of salt
  • 1 teaspoon of baking powder
  • ½ cup milk, ½ & ½ , or heavy cream

Whisk well and allow to rest for 10-15 minutes, whisk again and cook 1/3 cup at a time in an oiled nonstick pan. Wanna get even fancier- add blueberries, chocolate chips, or 1/2 a cup of pumpkin with 1 tsp pumpkin pie spice.
