Remember those no bake peanut butter / corn flake cookies from the 70’s? My mom used to make them at Christmas. I loved those things!! One of the ladies from a Facebook group had a little mishap in the kitchen. It turns out her faux pas was like when, “Someone got their peanut butter on my chocolate!” RUN… DO NOT walk to the kitchen and make these NOW!!!!!!!!


Whatcha Need and Whatcha do:

  • 1/4 C xylitol
  • 2 T butter
  • 2 T cream

Melt first butter and xylitol in a small saucepan; add cream and stir well. Stir often and allow to reduce to proper caramel color. Dump in everything else, remove from heat and stir well.

Take off heat and add:

  • 1/4 tsp caramel extract
  • 2 heaping tablespoons of PB powder
  • Pinch of sea salt
  • ¾ C roasted shelled peanuts
  • 3 wasa crisps crumbled ( I used a plastic sammich bag and a meat tenderizer hammer thingy)

After everything is well mixed- spoon onto parchment paper and allow to cool… I put mine in the freezer and licked the bowl while I waited for them to set…
